Jérôme Banctel, the 2-Michelin-starred chef, keeps a wary eye on the Feuille de Chou, which serves a healthy, traditionally French menu, which favours select ingredients. Here, you can see eco-friendliness on the very plate with local and seasonal supplies from organic farmers and market gardeners meeting our own specifications.

Organic and eco-friendly convictions

While we stand up for organic food, we also have other firm convictions. For fish, for instance, we source reasonably and responsibly. We source cyclically, so what we offer changes with the breeding seasons.
